●KINPIRA GOBOU-----Burdock
Kinpira
*Kinpira is a
popular Japanese home cooking dish. Soy sauce
and red hot pepper give this menu a piquant taste.
For this
vegetable dish, carrot can substitute for burdock root.

<Ingredients (for four)>
200g burdock root
30g niboshi(sun-dried sardines)
1 1/2 tablespoons salad oil
1 teaspoon red hot pepper (cut in thin round slices)
1 tablespoon sugar
1 tablespoon of soy sauce
1)Clean the burdock root and try to wash off most of
the mud.
Scrape the skin off with the blunt side of a knife.
Then cut the burdock
root into shaving by slanting the knife as if sharpening
a pencil. This method
of cutting is called "sasagaki". Immediately
submerged the cut burdock in
water to get rid of its harshness. Take it out onto
a strainer and drain,
eliminating water droplets.
2)Remove the head and guts from niboshi. For big pieces
tear into smaller
portions.
3)Heat the salad oil on a pan over medium heat and add
the cut burdock and
niboshi. Stir fry and then add the red pepper.
4)Continue stirring until the oil is evenly spread.
Add sugar and soy sauce.
Continue stir-frying until the liquid is almost reduced.
